  • 1 cup graham cracker crumbs (about 8 crackers, crushed)

  • ½ cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips (semi-sweet or milk chocolate)
  • 1 cup mini marshmallows
  • 1 Hershey’s chocolate bar, broken into pieces
  • Extra graham cracker pieces for topping (optional)

Instructions

  • Preheat Oven: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Mix Dry Ingredients: In a medium bowl, whisk together flour, graham cracker crumbs, baking soda, and salt. Set aside.
  • Cream Butter & Sugar: In a large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy.
  • Add Wet Ingredients: Mix in the egg and vanilla extract until fully combined.
  • Combine: Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Fold in Add-ins: Gently fold in the chocolate chips and mini marshmallows.
  • Shape Cookies: Scoop tablespoon-sized dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  • Add Toppings: Press a Hershey’s chocolate piece and extra graham cracker bits onto the top of each cookie.
  • Bake: Bake for 8-10 minutes, until the edges are golden brown and marshmallows are slightly toasted.
  • Cool: Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack.

  • If marshmallows melt too much, try chilling the dough for 30 minutes before baking.
