Perfect for busy families, this hands-off, slow-cooked meal is sure to become a weeknight favorite.

Ingredients

Scale
  • 1 lb ground beef (80/20 lean-to-fat ratio recommended)

  • 1 can (10.5 oz) cream of mushroom soup

  • ½ cup milk

  • 45 medium potatoes, thinly sliced

  • 1 cups shredded cheese (cheddar or your choice)

  • 1 small onion, finely chopped

  • 1 clove garlic, minced

  • Salt and pepper, to taste

  • Optional: chopped green beans, bell peppers, carrots (for extra veggies)

  • Optional: splash of cream for added richness

Instructions

  • Brown the Meat: In a skillet over medium heat, cook the ground beef until browned. Add onion and garlic, cooking until fragrant. Season with salt and pepper. Drain excess fat.

  • Prepare the Sauce: In a bowl, mix the cream of mushroom soup with milk. Set aside.

  • Layer in Crockpot: Spray slow cooker with non-stick spray. Layer sliced potatoes on the bottom, followed by half of the cooked beef mixture. Pour half of the soup mixture over it and sprinkle with cheese. Repeat layers, ending with cheese on top.

  • Cook: Cover and cook on low for 4–6 hours or high for 3–4 hours, until potatoes are tender and the cheese is bubbly.

  • Rest: Let the casserole rest for 10 minutes after cooking to allow the sauce to thicken.

  • Serve: Top with fresh herbs or a drizzle of cream if desired. Serve warm with a fresh salad or steamed veggies.

Notes

Slice potatoes thinly to ensure even cooking.

Add chopped vegetables like zucchini, carrots, or green beans for extra nutrition.

Can be prepared in the oven: Bake at 350°F for 45 minutes in a greased casserole dish.

Store leftovers in an airtight container in the fridge for up to 5 days or freeze for up to 3 months.
