Description
German Potato Pancakes, or Kartoffelpuffer, are a traditional comfort food with golden, crispy edges and a soft, flavorful center. Made from shredded potatoes, onions, and a few pantry staples, they’re quick to prepare and perfect for breakfast, brunch, or a savory snack. Whether served with applesauce, sour cream, or a creative twist, these pancakes bring warmth and heritage to any table.
Ingredients
4 large russet potatoes, peeled and grated
1 medium onion, grated
2 eggs
1/4 cup all-purpose flour
1/2 tsp baking powder
1/2 tsp salt
1/4 tsp black pepper
Oil for frying (vegetable or canola)
Optional Add-ins:
1 clove garlic, minced
2 tbsp chopped chives or parsley
1/4 cup grated cheese (cheddar or feta)
Instructions
Peel and grate the potatoes and onion using a box grater or food processor. Place in a cheesecloth or clean towel and squeeze out excess moisture.
In a large bowl, mix together the grated potatoes and onion, eggs, flour, baking powder, salt, and pepper until well combined.
Heat oil in a large skillet over medium-high heat until shimmering.
Drop 1/4 cup portions of batter into the skillet and flatten slightly with a spatula.
Fry each pancake for 3–4 minutes on each side or until golden brown and crispy.
Transfer to a paper towel-lined plate or wire rack to drain.
Serve immediately with applesauce, sour cream, or your favorite toppings.
Notes
For extra crispiness, ensure the grated potatoes are well-drained.
You can keep pancakes warm in a 200°F oven while frying the rest.
Try sweet potato, zucchini, or beet variations for a colorful twist.
