Ingredients
1 ½ cups all-purpose flour or cake flour
2 tbsp sugar
1 tbsp baking powder
¼ tsp salt
1 large egg
1 ¼ cups milk (regular or buttermilk)
3 tbsp melted butter or oil
1 tsp vanilla extract
Butter or oil for the skillet
Optional: blueberries, bananas, or chocolate chips
Instructions
In a bowl, whisk together flour, sugar, baking powder, and salt.
In another bowl, beat the egg, then add milk, vanilla, and melted butter.
Pour the wet mixture into the dry ingredients and stir gently until just combined. Batter should be slightly lumpy.
Let the batter rest for 5–10 minutes.
Heat a non-stick skillet or griddle over medium heat and grease lightly.
Pour ¼ cup of batter per pancake onto the skillet.
Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
Serve warm with your favorite toppings.
Notes
Resting the batter helps create a lighter texture.
Don’t overmix—lumps are okay!
Use cake flour for even fluffier results.
Add mix-ins like fruit or chocolate chips after pouring the batter onto the skillet.
Can be stored in the fridge for 3–4 days or frozen.
