Instructions

  • In a bowl, whisk together flour, sugar, baking powder, and salt.

  • In another bowl, beat the egg, then add milk, vanilla, and melted butter.

  • Pour the wet mixture into the dry ingredients and stir gently until just combined. Batter should be slightly lumpy.

  • Let the batter rest for 5–10 minutes.

  • Heat a non-stick skillet or griddle over medium heat and grease lightly.

  • Pour ¼ cup of batter per pancake onto the skillet.

  • Cook until bubbles form on the surface, then flip and cook the other side until golden brown.

  • Serve warm with your favorite toppings.

Notes

Resting the batter helps create a lighter texture.

Don’t overmix—lumps are okay!

Use cake flour for even fluffier results.

Add mix-ins like fruit or chocolate chips after pouring the batter onto the skillet.
