  • 1/4 cup unsalted butter, melted
  • 1/2 cup brown sugar, packed
  • 6 pineapple rings (cut in half for 12 mini cakes)
  • 12 maraschino cherries

For the Cake Batter:

  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup pineapple juice (from canned pineapples)
  • 1/3 cup whole milk

Instructions

  • Preheat Oven & Prepare Pan: Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin or mini cake pan.
  • Make the Topping: In each muffin cup, add about 1 teaspoon of melted butter and sprinkle with 2 teaspoons of brown sugar. Place half a pineapple ring in each cup and add a cherry in the center.
  • Prepare the Cake Batter: In a bowl, whisk together flour, baking powder, and salt. In a separate bowl, beat butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla.
  • Combine Wet & Dry Ingredients: Alternately add the flour mixture and pineapple juice with milk, mixing until just combined.
  • Fill the Muffin Cups: Divide the batter evenly among the cups, filling each about 3/4 full.
  • Bake: Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
