  • 2 racks of beef ribs

  • 2 tbsp olive oil

  • 2 tbsp brown sugar

  • 1 tbsp garlic powder

  • 1 tbsp salt

  • 1 tsp black pepper

  • 1 tsp cayenne pepper (optional for heat)

  • 1 tsp dried oregano

  • 1 tsp ground cumin

  • 1 cup barbecue sauce (for basting)


Instructions

  • Prepare the Ribs: Remove the membrane from the back of the ribs for better seasoning absorption. Pat the ribs dry with paper towels.

  • Season the Ribs: Rub the ribs with olive oil, then generously coat them with the spice mix. Let them rest for at least 30 minutes (or overnight for deeper flavor).

  • Preheat the Grill: Set up the grill for indirect heat at around 275°F (135°C). If using charcoal, place the coals on one side of the grill. If using a gas grill, turn off one burner and cook on the unlit side.

  • Grill the Ribs: Place the ribs on the cooler side of the grill, bone-side down. Cover and cook for about 2.5 to 3 hours, turning occasionally.

  • Baste with BBQ Sauce: In the last 30 minutes of cooking, brush the ribs with barbecue sauce every 10 minutes to create a sticky glaze.

  • Check for Doneness: The ribs are ready when they reach an internal temperature of 200°F (93°C) or when the meat pulls away from the bones easily.

  • Rest and Serve: Remove the ribs from the grill, tent with foil, and let them rest for 10 minutes before slicing and serving.

Notes

For extra smoky flavor, add wood chips (hickory, mesquite, or applewood) to the grill.

If short on time, you can wrap the ribs in foil after 2 hours of cooking to speed up tenderness.
