Ingredients
1 cup all-purpose flour
2 tsp baking powder
1 tbsp sugar
1 egg
¾ cup milk
1 tsp vanilla extract
2 ripe bananas (mashed)
1–2 additional bananas (sliced into thick rounds)
Butter or oil for cooking
Optional: chocolate chips, nuts, or coconut flakes
Instructions
In a bowl, whisk together the flour, baking powder, and sugar.
In a separate bowl, beat the egg, then mix in milk, vanilla, and mashed bananas.
Combine the wet and dry ingredients, stirring just until combined.
Slice additional bananas into thick rounds.
Dip each banana slice into the batter, coating well.
Heat a greased skillet over medium heat.
Cook the dipped banana slices until golden brown, about 1–2 minutes per side.
Serve with your choice of dips like maple syrup, yogurt, or nut butter.
Notes
Use very ripe bananas for the best sweetness and texture.
For a gluten-free version, substitute almond flour or gluten-free flour blends.
Add fun mix-ins like chocolate chips or dried fruit to the batter.
