Ingredients
For the Shrimp:
1 pound medium shrimp (21–25 count), peeled and deveined
1 tablespoon olive oil
1 teaspoon garlic powder

For the Salad:
2 ripe avocados, diced
2 cups corn kernels (fresh or thawed frozen)
1 cup cherry tomatoes, halved
¼ cup red onion, finely diced
¼ cup fresh cilantro, chopped
1 jalapeño, seeded and minced (optional)
For the Dressing:
3 tablespoons fresh lime juice
2 tablespoons extra virgin olive oil
1 clove garlic, minced
½ teaspoon ground cumin

Instructions
Marinate the Shrimp:
Pat shrimp dry. Toss with olive oil, garlic powder, smoked paprika, salt, and pepper. Let marinate for 15–30 minutes.Prepare Salad Ingredients:
Dice vegetables and halve tomatoes. Dice avocado last and toss with a little lime juice to prevent browning.Grill the Shrimp (Option 1):
Preheat grill to medium-high (375–400°F). Thread shrimp onto skewers. Grill 2–3 minutes per side until pink and lightly charred.Or Pan-Sear the Shrimp (Option 2):
Heat a cast-iron skillet over medium-high. Add oil and cook shrimp for 2 minutes per side until opaque.Make the Dressing:
Whisk lime juice, olive oil, minced garlic, cumin, salt, and pepper.Assemble the Salad:
Combine all salad ingredients in a large bowl. Add grilled shrimp and dressing. Toss gently to combine. Serve immediately or chill for up to 30 minutes.
